We love our breakfast cereal – and there is a way to do it while staying ‘legal’ on your 30 Days Sugar Free Challenge!
4 cups old-fashioned rolled oats
2 cups unsweetened shredded coconut
2 cups raw almonds – sliced
3/4 cup coconut oil
1/8 cup raw, organic honey
4 cups unsweetened dried fruit – diced (raisins, mango, apricot, and/orfigs)
1 cup roasted, unsalted cashews
Preheat the oven to 350 degrees F.
Toss the oats, coconut, and almonds together in a large bowl. Whisk coconut oil and honey in a small bowl. Pour the liquids over the oat mixture and get in there with your hands until everything is coated. Spread onto a sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns an even, golden brown, about 45 minutes.
Remove the granola from the oven and stir while allow it to cool. Add the diced dried fruits and cashews. Store the cooled granola in an airtight container.
